Yes peeps, its the time of the year where presents are exchanged, and laughters are shared. I hope you enjoy your Christmas.
As for me, because it is Christmas, I felt festive and whipped up some chocolate cupcakes. No photos, just used the recipe from the chocolate sheet cake and poured them into cupcake cups.
Also, we packed some small goodie bags for the kids in the party we are supposed to attend. Afterall, its the thought that counts, right?
Recipe for Chocolate Sheet Cake
Makes 20 cupcakes, smallish
Combine in a mixing bowl:
2 cup flour
2 cup sugar
1/4 teaspoon saltIn a saucepan, melt:
225 grams butter
Add 4 heaping tablespoons cocoa. Stir together.
Add 1 cup boiling water, allow mixture to boil for 30 seconds, then turn off heat. Pour over flour mixture, and stir lightly to cool.
In measuring cup, pour 1/2 cup buttermilk (or substitute with almost 1/2 cup milk topped with vinegar, and let it stand for a minute).
Add:
2 beaten egg
1 teaspoon baking soda
1 teaspoon vanilla
Stir buttermilk mixture into butter/chocolate mixture.
Pour into sheet cake pan and bake at 350F/180C for 20 minutes.
