Cheddar Cheese Muffins

These cheddar cheese muffins are not sweet muffins as they use only a small amount of sugar but I absolutely love the slight saltiness and tang of cheddar cheese flavour! I realize that the picture comes out somewhat sterile, and ughh, but I’ll try to make another batch and see if the appearance improves.

Ingredients
Makes 1 dozen muffins

1 3/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons granulated sugar
1 large egg
1 cup milk
1/4 cup butter or margarine, melted
1/2 cup shredded cheddar cheese

Oven temperature: 400F/205C

Method

In a large bowl, combine flour, baking powder, salt, sugar, and shredded cheese. mix well. Make a well in the center of the mixture.


In another bowl, combine egg, milk, and melted butter; add to the flour mixture, stirring just until moistened. Spoon into greased muffin tins, filling two-thirds full.

Bake at 400°F (205°C) for 25 minutes.

These muffins are absolutely delicious as it is especially when they are freshly baked but I believe the muffin goes well with butter and jam too. Will make it a mental note to try them out the next time I bake them.
