Miso Soup

I am a soup person. That means, I would love to have soup with all my meals if possible, so most of the time when I cook at home, I will try to make myself a bowl of miso soup because they are convenient and easy to make. Miso soup is very nutritious too!

Ingredients:

3 cups dashi soup stock
seaweed (if the miso paste doesn’t come with them)
vegetables (optional I usually use leek and occasionally mushrooms)
1 block tofu
clams or some other seafood (optional)
3-4 tbsp miso paste
1/4 cup chopped green onion

Method:



Put dashi soup stock in a pan and bring to a boil. Since I don’t have dashi stock, I usually boil water and add the vegetables into the boiling water to soften. The vegetables will add a hint of sweet natural flavour to the soup.

In the meantime, cut tofu into small cubes and add them to the soup. Simmer the tofu for a few minutes on low heat. Right now if you have anything else to put in, such as clams and enoki mushrooms, put them in as well.

Scoop out some soup stock from the pan and dissolve miso in it. Gradually return the miso mixture in the soup. Stir the soup gently. Stop the heat and add chopped green onion. Remember not to boil the soup after you put miso in, because that will spoil the subtle flavour of the soup.

Serve them with your meal of rice!

    yeah, kinda like jap cooking for its simplicity and small portion. love chinese cooking too, but chinese cooking mostly produce more outcome than i could finish up alone.
