Spinach, Wolfberry and Meatball Soup
Date: 7 May 2007 Comments: 0

This is a simple soup which is fast and easy to make. By using anchovies stock, I added some wolfberries or goji berries into it and let it simmer. In the meantime, I made the meatballs by seasoning minced pork with soy sauce, fish sauce, starch and grounded white pepper.
When the soup colour is stained brownish red by the wolfberries, i.e. when the berries flavour thickens the soup, I added in the spinach, and form the meatballs to be added in together.

Simmer it for a little while more, and voila! spinach, wolfberry and meatball soup!
