Good Old Fashioned Pancakes

I got this recipe somewhere and modified it according to how I like my pancakes to be. This pancake is not sweetened, and best goes with maple syrup, honey or jam and a dollop of butter.

Ingredients:

150 g all-purpose flour
10 g baking powder
5 g salt
15 g white sugar
250 ml milk
3/4 egg (this is strictly optional)
30 g butter, melted


Method:

  1. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth. I prefer not to put the eggs since I don’t fancy the eggy smell of the pancakes.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

These blue pancakes, or denim pancakes as I love to call them, was a product of laziness. I was frying the pancakes and there were so much of batter left that I added some of the wild blueberries jam in it, another tablespoonful of sugar, and fry them in smaller sizes. The colour is nice, but other than that the taste is somewhat how similar to the old fashioned pancakes. I still need to eat them with the blueberry jam. From the look of it, I need to improve my frying skills to get them correct, and better looking.
