Dates and Wolfberry Chicken Soup

Two chicken drumsticks, a handful of red dates and wolfberries and small pinch of dangui is all it takes to boil this soup. Simple ingredients isn’t it? There is still room for more flavour, and additional herbs such as yoke chuk, tong sam and pak kei will greatly enhance the herbal taste of the soup.
But since I prefer the soup with dates and wolfberries as the main ingredients, I don’t add the rest. Wolfberries and dates are very nutritious and good for the eyes too.
Ingredients:
A handful of wolfberries
A handful of red dates
2 chicken drumsticks
1 1/2 bowl of water
A pinch of dangui (optional) - do note that dangui carries a tart and bitter taste
Method:
I boiled water in pot and add in all the ingredients sans the chicken. When the colour of the water change to a brownish hue due to the herbs, add in the chicken and boil until the drumstick meat is tender. Remember to add salt to taste.
The oil is from the chicken itself, since I didn’t de-skin the drumsticks beforehand. Double boiling the soup will produce a clearer broth, but since the method is quite troublesome, I just boil them over the stove instead.
